Sometimes the extra color data is irrelevant; however, if you know what you doing with software, often you can “tweak” more quality from the extra bits, or at least distribute the bits to your own liking. Some photographers find that by carefully mapping the tonal values of a RAW image they can capture much more detail in both shadow and highlight areas than would be possible otherwise.
